Nothing is more comforting than a bowl of homemade tomato soup. This Creamy Tomato Soup is packed with fresh, wholesome ingredients and is perfect for any season.

Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 5 fresh tomatoes, chopped (or 1 can of whole peeled tomatoes)
  • 2 cups vegetable broth
  • 1 tsp dried basil (or a handful of fresh basil leaves)
  • Β½ tsp sea salt
  • ΒΌ tsp black pepper
  • Β½ cup coconut milk or heavy cream for creaminess

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sautΓ©ing until soft and fragrant.
  2. Add chopped tomatoes, vegetable broth, basil, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for about 20 minutes to allow flavors to meld.
  4. Use an immersion blender (or transfer to a regular blender) to puree the soup until smooth.
  5. Stir in coconut milk or heavy cream for a velvety texture.
  6. Simmer for another 5 minutes before serving.
